I am making my own wedding cake, but hate fruit cakes! Will a three tier genoise sponge support ok when?
stacked one on top of the other? have heard about using wooden dowels to support but some blogs mention that its best to use a fruit cake as bottom tier – whats the best advice?
Skip the fruit cake. Make your favorite kind of cake and then use PVC pipe pieces to support each tier. Same principle as dowel rods, but PVC won’t absorb moisture from the cake and is more sanitary. Once you cut the pipe to the right sizes, run them through the dishwasher to ensure cleanliness.
Each tier should be placed on a custom cut piece of Plexiglas. Again, easier to clean than wood, cardboard and looks cleaner as you cut pieces away.
